Put Whatever Topping You Like On This Sugar Free Yellow Cake
"A recipe has no soul. You, as the baker, must bring soul to the recipe."
The great thing about sugar free yellow cake is that you can put whatever you want on it, such as a strawberry topping, or a chocolate frosting. The choice is yours!
2/3 cup mayonnaise (Helman's Brand has no Sugar in it)
1 cup Almond milk
2 teaspoons vanilla or vanilla extract
Instructions:
1.
Preheat oven to 350 degrees F. Grease and flour two 8 or 9 inch round cake pans.
("To flour a pan, grease the pan with butter. Spoon a generous amount of flour into the greased pan. Tilt the pan so the flour slides over all inside surfaces. Now Turn the pan over and tap vigorously to remove extra flour.") - MealsForYou.com
2.
Mix the flour, salt, baking soda, baking powder and Xanthan gum together and set aside.
3.
Mix the eggs, Agave Nectar, and mayonnaise until fluffy. Add the flour mixture, almond milk and vanilla and mix well. Spread batter into the prepared pans.
4.
Bake at 350 degrees F (175 degrees C) for 25 minutes. Cakes are done when a toothpick inserted near the center comes out clean.
5.
Cool and then Add whatever topping you might desire.
Enjoy!
