The Recipe

Batter

  • 1/2 cup melted butter
  • 1 cup of flour
  • 1/2 cup agave 
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup room temperature milk
  • 1 room temperature egg

Filling

  • 1 can of sliced peaches, drained (make sure the brand you buy is sugar free) or use 6-8 fresh peaches, peeled & sliced. 
  • 1 cup coconut sugar (low glycemic)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg  

Directions

  1. Preheat the oven to 350-degrees. 
  2. For the batter: Add melted butter into a 9x11 inch pan.
  3. Mix together flour, baking powder and salt. Pour batter evenly over melted butter. in the 9x11 pan.
  4. Add in the milk, egg, and agave nectar (room temperature) to the dry mixture. Mix it all together.
  5. For the filling, combine peaches, coconut sugar, & spices and spread over the batter. Don't stir it!
  6. Bake for 30-45 minutes, or until the batter comes to the top and is golden brown. Serve warm with cream.

More Detailed Walk Through (With Pictures)

Here is everything we need to whip us this delightful little dessert. 

Add melted butter to your 9x11 baking dish and set aside. 

Let's get our batter ready, mixing all the dry ingredients together, flour, baking soda and salt. 

Then add our room temperature milk to the dry mixture. 

Next we want to mix in our room temperature egg and agave. 

Quickly mix all that together, creating a batter that looks something like this...

Let's make our filling. Add the coconut sugar to the pre-drained peaches.

Along with the spices.

Give the peaches, sugar and spices a good stir. Set aside.

Pour batter evenly over melted butter.

Spread peaches, sugar and spices over the batter. 

Bake for 30-45 minutes, or until the batter comes to the top and is golden brown. 

Best served warm with cream or home made sugar free whip cream :D
