A Sugar Free Lemon Cake; With A Lavender Twist!

The Lavender in this Sugar Free Lemon Cake recipe really brings out some interesting tastes!

The Recipe:

  • 1/4 of a teaspoon of Stevia Organic Extract Powder
  • 2 cups of cake flour (8 oz)
  • 1 teaspoon of baking powder
  • 1/2 of a teaspoon of baking soda
  • 1/2 of a teaspoon of salt
  • 1 whole egg
  • 1 egg white
  • 5 tablespoons of unsalted butter
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of lemon oil
  • 2 tablespoons of dried Lavender
  • 1 cup nonfat yogurt
  • The Glaze

  • 1/16th of a teaspoon of Stevia
  • 3 tablespoons water
  • 1/4 teaspoon of lemon oil



Instructions:

1.

Preheat your oven to 350ºF and then line a 9×5 inch loaf pan with aluminum foil and spray with Pam (Or other non-stick spray).

2.

Sift together the flour, baking powder, baking soda, and salt.

3.

In another bowl, whisk the whole egg and egg white together. Set aside.

4.

Beat butter for about 1 minute with the lavender. Gradually add the stevia and continue to beat on high for about 3 minutes. Dribble eggs in slowly, about 1 tablespoon at a time, beating constantly for about 2 minutes.

5.

On low speed, beat in a third of the flour mixture. Then add half of the yogurt, then beat in half of the remaining flour. Add the rest of the yogurt, the vanilla, and lemon oil, and then beat in the rest of the flour.

6.

Scrape into the prepared pan. Bake for 40 to 45 minutes, until a toothpick inserted comes out clean.

7.

Cool for 10-15 min on a rack. In this time, whisk together the glaze mix. When you take the cake out of the pan, pour your glaze over the cake.
