These Simple Sugar Free Raspberry Almond Cookies Are A Fruity Surprise...

My Sugar Free Raspberry Almond Cookies are not just a sugar free delight: They are a treat that will have your guest screaming for more every visit.

Don't forget to get your Stevia Organic Extract Powder for sweetening before you start baking!

Allergy Information:

Sugar-Free (Your Raspberry Jam will have natural fruit sugars though...)

Peanut-Free (Contains Almonds, obviously)

Dairy-Free

Soy-Free



The Recipe:

  • 1/8 of a teaspoon of Stevia Organic Extract Powder
  • 1 cup of softened butter
  • 1/2 of a teaspoon of almond extract
  • 2 cups of all-purpose flour
  • Raspberry jam (You will want to pick a brand that you can eat obviously. Keep in mind that every brand will show a fair amount of sugar in it because the raspberries themselves have natural sugars)



Instructions:

1.

Preheat oven to 350 degrees Fahrenheit.

2.

Mix stevia, butter, almond extract and flour in a medium sized bowl.

3.

Shape into balls and place on a greased baking sheet.

4.

Press your thumb into center of each cookie. This will create a pocket for the raspberry jam to go.

5.

Fill the hole you just made with raspberry jam.

6.

Bake 8 to 10 minutes. Because you are using stevia, the recipe will not brown, so be sure not to overbake it.

7.

Remove from the oven and cool it (Have any wire racks?)
