The Recipe

  • 1/4 of Cup of Agave Nectar
  • 1 cup whole-grain yellow cornmeal | fine-ground
  • 1 cup of unbleached all-purpose flour
  • 1/2 teaspoon of salt
  • 4 teaspoons of baking powder
  • 2 large eggs | at room temperature
  • 1 cup of almond milk | at room temperature
  • 2 tablespoons unsalted butter | melted

Directions

  1. Preheat the oven to 375 Degrees Fahrenheit. Grease the bottoms of 12 muffin tray slots with shortening, and then spray the tray with cooking spray.
  2. Mix the dry ingredients together in a large bowl. Then mix the wet ingredients together in a medium sized bowl.
  3. Combine the wet and dry mixtures; mix until just moistened, without over mixing.
  4. Pour the mixture into your prepared trays, and then bake for 20-30 minutes until the muffins are golden brown. Poke them with a toothpick in the center, if it comes out dry then they are done.
  5. Wait for 5 minutes after taking out of the oven, and then remove them from the trays for serving.

I'm really not as angry as I look in this picture
