These chocolate chip cookies made with Stevia are not only sugar free, but are lactose free as well so you will be able to eat without fear of a stomach ache!

So enjoy one of my favorite stevia cookie recipes!

The Recipe

  • 2 cups all-purpose flour
  • 3/4 teaspoon sea salt
  • 3/4 teaspoon baking powder
  • 1 egg
  • 1/2 teaspoon white stevia powder
  • 1 teaspoon vanilla flavoring
  • 1 cup salted butter, softened
  • 1 and 1/4 cups of Scharffen Berger Unsweetened Cacao Baking Chocolate (Cut into chunks to make chocolate chips).

Directions

  1. Preheat the oven to 350 F. Lightly grease a cookie sheet and set aside.
  2. In a medium mixing bowl, sift together the flour, salt, and baking powder, and set aside.
  3. Place the egg, stevia, and vanilla in a large mixing bowl, and beat well with a wooden spoon or an electric hand-held mixer. Slowly add the butter, continuing to beat until the mixture is smooth and creamy.
  4. Add the dry mixture to the wet mixture, just a bit at a time. Keep mixing it in as you mix them in. Fold in the chocolate chips.
  5. Drop tablespoons of batter on the cookie sheet, a few inches apart. Bake for 20 to 25 minutes, or until the cookies are golden brown.
